The freeze-drying systems of Bucher works with conventional condensation and vacuum system or Zeolite system. With the Zeolite system the vapour is absorbed by the Zeolite. The Zeolite system is working without refrigeration and regenerated by means of heating up. The very low partial pressure results in a better aroma retention and more intensive colours. It is even possible to dehydrate live cells without damaging the membrane of the cells.
